Substitute for Hash Browns

 

I have always liked cauliflower, but it is really becoming my go-to food – particularly if I’m trying to lose weight or keep my blood sugar under control. I love cauliflower mash, cauliflower steaks (think slices of cauli roasted with olive oil, salt, and pepper), cauliflower pizza crust and so on – but I love this idea of cauliflower hash browns – particularly since my local store sells “ready-riced” cauliflower! I know they’re fried – but sometimes you just need that flavor!

  • 1 tbsp. freshly squeezed lemon juice 2 cloves garlic, minced

  • 1/4 tsp. sea salt
  • 1 head cauliflower
  • 2 tbsp. fresh parsley, finely chopped (for garnish)
